I was given a few of these little delicacies straight off the tree the other day. I was so excited as I’ve never seen or even heard of them! As my heart raced with excitement and my mind spun with ideas, I got myself to market as fast as possible. This is what followed…
- 2 fillets halibut
- 4 finger limes
- oilve oil
- black sea salt (Williams Sonoma)
- black pepper
- Lay out halibut onto parchment-lined baking sheet. Drizzle with oilve oil. (searing beforehand is optional, I use 1 tablespoon ghee and brown each side). Broil until cooked through, Approx 4-5 minutes.
- Slice the limes in half, sqeezing from the stem out. Deposit the juice capsules over the fish before serving. Sprinkle with black sea salt and serve.
