My recipe calls for 1/3 cup raw honey, but for a less-sweet treat, you can eliminate this. The dates are sweet enough to flavor the whole mix! Also, you can play around with the type of nuts and seeds you use…hemp seeds would be nice, pecans or hazelnuts anyone??
Once blended together in your food processor, this gooey mix is ready for the dry ingredients. I mix this recipe in 2 parts to get the best blending. Mix the gooey, wet stuff in one bowl, then the dry powders in another and combine with your hands. Really, it’s the only way so don’t get too posh about about it and dive right in. Kids need a project??
Now is the time to start forming your bon bons. I don’t measure, I just go by bite-size or whatever size I think will be easy and appetizing. The coconut oil keeps the mix from sticking to your hands. But, I do work them quite a bit to make them firm. The more I roll them between my hands, the more cohesive they become. Then, when you chill them, they aren’t crumbling and falling apart. It’s sort of a labor of love.
Now the fun part. Choose your toppings! I like a trio of shredded coconut, cocoa powder (not surgary chocolate powder) & finely chopped nuts. After they’ve set in the fridge for an hour or so, roll them in the toppings and vary as you go. Chill again and they’ll be ready to go.
- ¾ cup raw cashews
- ⅓ cup sunflower seeds
- 1 cup walnuts
- 15 dates, pitted & halved
- 2 tablespoons coconut oil
- ⅓ cup raw honey (optional)
- ½ cup almond butter (can use peanut butter)
- ½ cup vanilla protein powder
- ¼ teaspoon salt
- ¼ cup almond meal
- ¼ teaspoon cinnamon
- For Topping:
- 1 cup raw organic cocoa powder
- 1 cup mixed finely chopped nuts
- 1 cup shredded, unsweetened coconut
- In the bowl of a food processor, combine the cashews, walnuts, seeds, dates, coconut oil, honey, and almond butter. It will be thick to mix but let it take it's course and it will eventually combine nicely.
- In a separate bowl, combine protein powder, salt, cinnamon, and almond meal. Stir to mix. Turn your date mixture into this bowl with the dry ingredients and combine well using your hands.
- On a cookie sheet lined with parchment, form small balls with your hands, working the mixture until it really stays together and isn't crumbly. Make bon bons out of the whole mix. Chill for an hour.
- Meanwhile, get your toppings divided into small bowls. When bon bons have firmed up in the fridge, roll them in the toppings, alternating each time so you have a nice variety. Chill again once all are covered in the toppings and store in the fridge for a week or two. You can also freeze them!
